Book Launch Party

Our book hits shelves on November 14th, and we’re throwing party!

We’re really excited to celebrate our labor of love, so we’re making a night of it at The Archery with bites from Central Kitchen / Salumeria and The Cheese School, and drinks from Almanac Beer Co. and Workhorse Rye. And of course, there’s probably going to be a lot of cake. Like, a lot. And cookies. And brownies. And just get your tickets already and come party with us.

NB: There are two ticket types, one of which includes a book. Regardless, books will be for sale at the party, and we’ll be signing.

Metate Demo on the Parklet

This is hard work!

We’ll make a small amount of chocolate the traditional way by grinding cocoa nibs and sugar on a metate (the rectangle stone in the photo) using a mano (the rolling pin shaped stone in the photo). It will take a while… so we suggest you stop by to see it started, then head into the cafe to watch our team make chocolate on our larger scale production equipment before making your way back to the parklet to taste the results.

Cheese and Chocolate with Bi-Rite Market

Dandelion Chocolate and Bi-Rite Market invite you to an evening of unexpected flavors as we pair chocolate and cheese. Jon Fancey of Bi-Rite Market will bring a selection of cheeses that we’ll compare and contrast with our own bean-to-bar chocolate, made right here in San Francisco. The tasting will include five to six varieties of both cheese and chocolate, as well as a look into our process through a tour of our factory space.

Tea and Chocolate
with Song Tea

We are so excited to introduce our newest pairing event with our favorite tea experts, Song Tea. Song Tea sources rare tea and handcrafted ceramics of exceptional quality and character, and just like us, works directly with producers at origin.
At each session, we will dive into the ways tea and chocolate are sourced and processed and enjoy a few pairings of white, green, oolong, or black tea paired with our single origin chocolate. We’ll take you on a private tour of our bean-to-bar chocolate factory too to get an up-close look at how we make chocolate.
This month, we will highlight several styles of Chinese and Taiwanese roasted oolongs. We’ll compare roasting styles and terroir and their effects on caramelization and flavor development in tea. We hope you can join us!

SAKE AND CHOCOLATE:
PROCESS AND PAIRING
AT SEQUOIA SAKE BREWERY

Join Sequoia Sake and Dandelion Chocolate for an exploration of flavor as we pair different kinds of sake with single origin chocolate. We’ll start the night off with a tour of Sequoia Sake’s factory, tasting samples from various parts of processing to explore flavor development in sake, and then end our tour with a tasting flight. Next, we’ll learn about chocolate processing by tasting the changes that occur throughout the life of cacao, from fruit to roasted bean to molten chocolate, culminating with a flight of Dandelion Chocolate. After we understand how each product’s flavors were created, we’ll explore our favorite pairings and leave attendees to choose their own favorites by considering how each complements or detracts from the other.

More on Sequoia Sake: Founded in 2014, they are the only local sake producer who specializes in making Namazake (live, unpasteurized sake), which keeps the complex, nuanced flavors that are typically filtered out in large-scale processing and pasteurization. Sequoia prides itself on using only four ingredients to make its sake: water, rice from the Sacramento Valley, koji (a special mold which converts rice starch to sugar), and yeast.

Coffee and Chocolate:
Pairing Event
At Ritual Coffee Roasters

Join us in our newest pairing partnership with Ritual Coffee Roasters. In this experience, we will walk through four different types of brewing methods, from Chemex to french press. We will taste and pair multiple different roasts from Ritual Coffee with our single-origin dark chocolate. We’ll take an up-close look at Ritual Coffee’s roasting process as we walk through their Howard Street roasting facility. Get ready for a caffeinated tasting adventure!

SOURCING TALKS

Throughout the year, Greg D’Alesandre – our Chocolate Sourcerer – visits farms around the world (sometimes with other Dandelion team members in tow) and reports back about what he has learned. We hope to host these monthly during the first week of the month.

Sourcing Talks are less formal than a class with a 30-minute tasting of chocolate from the same farm, country or region followed by about an hour talk and ending with a 30-minute Q&A. Talks are held on the mezzanine in our cafe at 740 Valencia Street in San Francisco and are free to attend. For tasting portion, guests can sponsor another makers bar and we will purchase a selection to try. We look forward to seeing you then!

Valentine Making and Brief Valentine History

Join us to experience Valentine’s Day at the Dandelion Chocolate Factory! This class will be part lecture about the history of Valentine’s Day chocolate, and part crafting class. You’ll have the opportunity to make your own custom Dandelion Chocolate Valentine gift boxes by choosing 3 of your favorite bars, then decorating and customizing them, to present the perfect gift to your favorite Valentine(s). We will provide craft supplies and instructions on how to tie a Dandelion Chocolate style ribbon around your gift box (or boxes if you choose to gift each of your three bars to a different person). If you have a special memento or item you want to incorporate into your Valentine, feel free to bring it!

Industry Intensive
FoodCraft Institute

Each year, Dandelion Chocolate opens its doors to the students of the FoodCraft Institute’s Industry Intensive on Chocolate for a four hour session on bean to bar chocolate making. Students visit local chocolate makers and chocolatiers for hands on experience and to gain a broad picture of the chocolate industry from behind the scenes. This year, sessions include classes by Chocolate Garage, Bar Cacao, Poco Dolce, Barlovento, Tcho, Cacoco, Guittard and Dandelion Chocolate.

Enrollment Deadline: August 11th
